Sodium nitrate is a carcinogen. It can be found in deli meats and bacon. Most people don’t check for it. It is surprising the number of products it is in. If you read the labels you will be shocked. Check out premade salads that contain chicken. Sometimes if you are on your way home from work, you may not feel like cooking so you will stop in at the grocery for something quick. The premade salads look really appealing. However, if you are looking for something healthy, look again. You will be surprised at the label. No one would even think of salad being a processed food. A few of the foods that contain sodium nitrate are cured meats, bacon, ham, salami, corned beef and hot dogs, pate, pickled pig’s feet, canned meat (Vienna sausages, deviled ham), smoked salmon , dried fish, jerky and salted or cured meats. If you love these foods you will need to go to the health food section of the grocery or a health food store in order to enjoy them without the risk of cancer. I remember reading about the old ‘Bonanza’ TV series and the death of Michael Landon. He carried a big roll of deli meat with him all the time that he snacked on. It may have been a contributing factor in his death. In the Good Gus series, now that I think about it, I may have subconsciously remembered all the positive things the family did which inspired me to write my books in the same way. The series is online at Kindle with a few books on Nook and Waterstones. “Misplaced Trust” can easily be located online at 24 Symbols, Apple, Nook, Kindle, Kobo, Page Foundry, Scribd, Playster and Tolino.
