Potatoes

As an Irish person I grew up eating potatoes. It is not unusual for me to eat roasted potatoes with a poached egg for breakfast and then some type of potatoes for dinner. I recently saw an article about french fries. An older woman had been given a fast food meal from a friend. So as not to be rude she claimed she couldn’t finish the food and took it home. She lived in the city, so prior to reaching her door to her apartment condo, she tossed the fries to the birds thinking they would eat them. The next day the fries were still on the sidewalk untouched. However, a group of ants had attempted to eat them and they all died. What does that tell you about the food? During the famine the Irish were unable to grow potatoes because of a blight that came from Europe. It had been their main crop.  It wasn’t until after 1851 that the potatoes were able to be grown again. The truth is they do contain a geat many nutrients including Vitamin C, B6, potassium, manganese, magnesium, phorphorous, niacin, and folate. What is wrong with the potatoes grown today in the United States I have previous mentionsed in a different blog when they are used primarily for fast food and to look perfect. Sometimes, while my son and I were living in Ireland, he would come home from his job and make a potato as a snack. It sure does beat outside food. One time we were visiting Mrs. Hoover, in Virginia. She ran a summer camp with her husband that my late husband attended every summer as a young boy. At this one visit she insisted we stay for lunch. She had to have been close to ninety at that time. She made the best potato soup that my family ever ate and that I still make today. So when you think about potatoes, remember, they are healthy, nutritious, a great snack for you and your children, plus they taste good, don’t you agree?
